Later, continue to a local olive oil mill to learn the full production process, followed by a rich light lunch of tastings paired with the mill’s oils. Return to Norcia in the afternoon for a hands-on cooking class at Casa Bianconi (4:00 PM), an exclusive experience set inside a historic Norcia home. Truffles in the Wild
After breakfast, head into the wild, breathtaking nature surrounding Norcia for a memorable truffle-hunting experience. Travel by minivan to the search area, then follow an expert truffle hunter and his devoted dog as you look for Norcia’s prized black truffle. Please note: in May and September, this experience is replaced by a cheese-making school and a visit to a local cold cuts factory. Lunch is on your own. In the afternoon, we suggest exploring Norcia itself—its main street is lined with gourmet shops where the scent of cheese and salumi fills the air. If you wish, you can also visit the artisan chocolate factory Nursia. In the evening, enjoy a refined farewell dinner at the elegant restaurant in Palazzo Seneca. Overnight in Norcia.
