Umbria is well-known for its truffles. From November to March, Norcia and Spoleto produce truffles of high quality. There are several kinds of truffles: black truffles, scorzone (available in summer), and white truffles.
Enjoy specialties such as torta al testo (bread prepared with water, flour, salt, pepper, and olive oil, and cooked on a special marble stone in a wood burning oven). Torta al testo is sometimes stuffed with ham, sausage, or simply with herbs prepared in olive oil. A typical meat dish is Faraona alla ghiotta (roasted guinea-fowl).

Compliment your meal with some of the region's well-known wines: the famous white wine of Umbria, Orvieto, a blended wine that is at least 60 percent Grechetto (considered its best variety), with up to 15 percent Trebbiano (known locally as Procanico), or the companion DOC red wine, Rosso Orvietano.
