Food (Cibo)

Culinary specialties of San Gimignano are delicious mixtures of interesting meats, with Croco, a meat variation of the mixed fish dish, caciucco, the town’s specialty.  Scottiglia, a hearty dish of boar, pheasant, hare, rabbit, or chicken, is flavored with tomato and spices and slowly cooked to a delicious offering.  Liver, tripe, rabbit, and panzanella are also popular foods of San Gimignano.  The traditional pasta called pici served with mint-leaf pesto, and crème caramel flavored with coriander are also specialties along with the town’s own version of panforte.
