Matera gastronomy is similar to the Puglia’s because of their shared border. For centuries now, the orecchiette (ear-shaped pasta) have been made here, also called strascinati. They are served with tomato sauce, or boiled turnip tops, broccoli, cauliflower, breadcrumbs and raisins.

One the most tasty products is a kind of mushroom, called fungo Cardoncello, cooked up with different recipes or simply eaten raw served with ricotta, lemon juice and the local olive oil. There is also the nghederata, which is salted and spiced pork meat preserved in a vase. Do not forget to try some fig compost, homemade at the end of the summer, where the delicious local figs are perfectly ripe.
