The production of cheese is vast: there are many varieties of local pecorino and ricotta cheeses, and the typical burrata, a mozzarella cheese filled with cream, is also delicious. In Puglia there are a huge production of almonds, which are the main ingredient for the sweets and cakes. There is also a discrete variety of wine, from whites to reds, from the rosés to sweet sparkling ones. Some reds are called Aglianico Doc, Rupicolo di Rivera Doc, or Donna Marzia.
